All of our meat is ethically raised right here on the ranch. We take pride in the entire process that enables us to offer high-quality farm to table products. The feed, the space inhabited, and the hands on day-to-day all contribute.
We choose Berkshire pork for it’s higher marbling and therefore greater flavour and tenderness. It does take longer to get Berkshire to butcher weight then commercial pork breeds but the flavour is worth it. Our cattle herd is majority Lowline and Miniature Hereford. The feed to meat conversion rate is way better with this herd which means less pasture acres and grain to fatten. They also have smaller bone density and maintain a large rib size so we don’t lack on prime cuts as you would with other breeds. They are known for excellent marbling and due to their smaller size they are easier to handle which saves on intense fencing. We will also be able to offer Wagyu in the fall of 2023 with a new bull.
We take our time to get our animals butcher ready which can sometimes mean a bit of a wait but a wait well worth it we ensure!
