1/2 c olive oil
1/4 c red wine vinegar
1/4 c diced onion
1 c fresh herbs (You can use a blend of your favourite herbs or even just one variety at a time. We love oregano, cilantro, parsley, basil, even fennel fronds. Just keep in mind you want a tender herb or just the leaves of herbs with a harder stem as you are blending this up into a paste!)
Zest and juice from 1 lemon
2 cloves garlic (optional)
1/4 tsp chili flakes (optional)
1/2 tsp pepper
1/4 tsp salt
Pulse in a blender or food processor.
Great served with roasted meat, fish, vegetables or even mixed into a dip or dressing.
