"A great ode to Canada with delicious local ingredients!"
1 pkg Schott Ranch side bacon, thawed and diced into thin strips.
1 large onion, finely diced
2Tbsp Wildly Canadian Wildfire Mustard
2-3 Tbsp Schott Ranch maple syrup
2 oz Canadian Whiskey, we used Wayne Gretzkey’s Maple Cask
In a large pot cook your diced bacon, strain off fat that has rendered and add diced onions. Cook until onions are softened and starting to carmelize, stirring often.
Add in your mustard and stir to mix in.
Pour in the whiskey to deglaze the pan and cook out the alcohol. Add maple syrup and taste. Adjust flavors accordingly if needed! I sometimes add a splash more whiskey at this stage.
This jam can be stored in the fridge or freezer and makes a great burger topper, cheese board spread with Brie, aged cheddar or chevre, added to eggs or even on top of pancakes!
