Deconstructed Ratatouille with Sausage over Rice
Deconstructed Ratatouille
INGREDIENTS:
1 eggplant, diced
2 bell peppers, diced
1 onion, diced
1 leek, diced
1 bulb fennel, sliced
1 cup cherry or grape tomatoes
2 stalks celery, diced
1 pkg Schott Ranch Mild Italian Sausage
GARNISH:
Fresh basil
Fresh oregano
DIRECTIONS:
On a large baking sheet, coat your favourite blend of Italian vegetables and spread into an even layer. Top with Mild Italian Pork Sausage and bake at 350 while rice is cooking.
Rice:
INGREDIENTS:
1 c rice
1 1/2 cup water
1 cup chopped fresh spinach
1 tsp butter
2 tbsp fresh oregano or 1/2 tsp dried
DIRECTIONS:
In a large casserole dish combine ingredients. Bake with lid on at 350 for 35-40 mins until rice is cooked. Fluff with fork and season with salt and pepper.
To plate, top rice with roasted vegetables and sliced sausage. Drizzle with balsamic glaze and sprinkle fresh chopped herbs over.
